Need a good go-to dish that can be made in minimal hands-on time with minimal ingredients? The following 3-Ingredient Tamale Bake fits those criteria, and is good and filling. Frozen and refrigerated tamales are available at most mainstream grocery, warehouse, and Latin stores, and many brands are high quality, affordable, and really tasty. If you make your own tamales and happen to have some in the freezer, you can use them in this quick and easy dish. Although I’m not an advocate of canned enchilada sauce, and keep my homemadeBasic Mexican Red Chili Sauce in the freezer, you can use your favorite brand of canned sauce if you like.

Pair this dish with shredded lettuce, and offer salsa and sour cream for toppers. Guacamole is also a good accompaniment if you have extra time or avocados sitting on the counter getting over ripe. Frozen guacamole is also pretty good if you have some in the freezer.

6 Servings

6 frozen or refrigerated beef or pork tamales, about 6 ounces each
1 10 oz. can red enchilada sauce, or 1 1/4 cups homemade (mild, medium, or hot – your choice)
2 cups grated Mexican Blend Cheese

  1. Preheat oven to 350°.
  2. Place the frozen tamales in a shallow baking dish in one layer.
  3. Pour the enchilada sauce over all and sprinkle with cheese.
  4. Spray a piece of foil with non-stick spray and cover the dish tightly.
  5. Bake 30 minutes; remove foil and bake an additional 10-15 minutes or until bubbly.
